Orange Curd


Well, the orange curd for the birthday cake is made. I should have photographed it before putting the plastic on, but I needed to work quick so a film wouldn't form. This recipe made about 1 1/2 cups which ought to be plenty (you can't overdo curd in a cake or it can be overwhelming).


You Will Need:


3 large eggs

2 large egg yolks

1/2 cup sugar

1/4 cup fresh squeezed orange juice

2 tablespoons fresh lemon juice

2 teaspoons grated orange zest

2 teaspoons grated lemon zest

1 stick unsalted butter (cut into small pieces)


In a small heavy pan, combine the eggs with a whisk. Slowly whisk in the sugar. Then the juices. Then the zest. Then butter. Heat over moderately low heat, whisking constantly until it thickens. Do not let it boil. This should take 8-10 minutes. Strain immediately into a bowl and cover with plastic. With a sharp knife, pierce it in a few places to let steam escape. Chill completely overnight before using.
