See that apricot souffle? Wrong size dish, under-baked, uninspired.
We ate it, and the flavour was great, but I really prefer my souffles less creamy. I'm sure some people would have thought this was perfect (except for the appearance). I do not, therefore I'm going to hold off on the recipe until I can give it another try. The proper sized dish and longer baking could make this something really special instead of just, OK.
