Asparagus Salad With Feta


I realise this does not look like much, but the way it came together it is destined to become one of our favourite salads.

Cook and chill the asparagus (I did mine in bamboo steamers). The salad had the usual lettuce and tomatoes but I added Feta cheese, capers and a dressing of clarified butter with salt and pepper (drizzled sparingly) and a squeeze of fresh lemon. As I said, it sure didn't take much to put together, but it really went well with our fish dinner.
