HyVee Honey Glazed Carrots



Danny picked up this recipe card at HyVee one day, and asked if we could prepare it for dinner. It was so simple, I couldn't really refuse. This is also the first time I needed to create a tag for, "low fat". I can't decide if that's funny, or appalling.

You Will Need:

1 lb. carrots, peeled and cut into half and then crosswise into 2 inch pieces. I didn't do that, I cut matchsticks.
1 tbsp. honey
1 teaspoon butter
1/4 teaspoon nutmeg or coriander (I used coriander)
Salt to taste
2 tablespoons water
Chopped parsley if you're feeling particularly fancy

Place carrots in a small saucepan and cover with water. Cover with lid. Simmer about ten minutes, or until tender. Drain.

In the same pan, combine the honey, butter, spice, salt and water. Bring to a boil and cook about a minute. Return carrots to pan and cook another minute, tossing carrots to coat. Garnish to your heart's content with parsley.

  1. Intriguing, might try it ... Wisconsin's first Hy-Vee opened a few months ago, a short bus ride from our apartment, and I've been favorably impressed by the store, by its prices and selection, and yeah, by its little recipe kiosk. Their parmisan chicken was affordable and yummy...

  2. From what I've seen of supermarkets in WI, Hy-Vee would pale in comparison. I once went to a store in Milwaukee that I swear, you almost needed a car to get around, it was so freaking huge.

    Hy Vee can be more expensive than the discounters on some things, but when they have a sale, they really have a sale. Good place to stock-up, but not so terrific for week to week groceries.
