Buttermilk Gorgonzola Salad Dressing

I wanted something light to compliment a salad of butter lettuces and beets. I had a wedge of Gorgonzola in the fridge, and for a change, buttermilk as well. Mr. Eat The Blog declared it success, and will be enjoying it again tomorrow.

You Will Need:

1/2 cup crumbled Gorgonzola cheese (I used Amablue, from the Amana Colony in Iowa)
1/2 cup buttermilk
1 tablespoon lemon juice
2 tablespoons olive oil
Salt and pepper

Toss it all in a blender until mixed. You don't want to puree it smooth, as a few crumbles of cheese are nice in a dressing.
