You can have this made in under five minutes.
2 large, ripe tomatoes, seeded and chopped
1/2 red onion, chopped
2 cloves garlic, chopped fine
1 teaspoon dried basil
Juice of a lime
Salt/Pepper
1 tablespoon sugar
1 teaspoon ground coriander
Mix well, store in a jar in the fridge.
