Pasta With Red Onion, Mushrooms and Grapes




A storm kept us home today, so I improvised a pasta dish that turned out really well. I don't think the green noodles added anything to the dish, but my son found it interesting enough to clear his plate.


You Will Need:


Pasta of your choice, cooked

6-8 ounches mushrooms (I had Baby Bellas on hand) chopped

1 large red red onion, chopped

1 teaspoon dried thyme

1/4 cup unsalted butter

2 tablespoons olive oil

1/2 cup red grapes, chopped

1/4 cup chopped parsley

1/4 cup Madeira

1/8 cup heavy cream

Salt and Pepper

Grated hard cheese


In a large frying pan, melt the butter and oil. Add the mushrooms, onions, grapes, thyme, and parsley. Cook over medium heat until soft. Begin boiling water and cook pasta. Right before draining pasta, turn the heat up and add the Maderia. Cook off the alcohol quickly over high heat. Remove from heat and stir in the cream. Adjust salt and pepper. Top with cheese.
