I made this salad to go with a Southwestern style salmon and black beans dish. It was such a hit, I've been asked to make this as a regular salad to serve with beans. If you have any salsa/tomato haters at home, this might just suit their tastes.
You Will Need:
1 cucumber, peeled, seeded, and chopped
A handful of radishes, chopped
1 bunch scallions, chopped
A handful torn basil leaves
Dressing:
1/4 cup lime juice
1 tablespoon corn oil
1 teaspoon coarse salt
1 teaspoon honey
Pinch tarragon
Pinch dill
Black pepper
Toss together, chill before serving.
