Egg Rolls

This time I managed to get photos before they were devoured. The white chunks you see are fried tofu, which worked well. These egg rolls were heavy on mushrooms and ginger with a bit of carrot and parsley to make it interesting.
You'll notice in the photo of the rack how coated in oil it is-that's why I'm always harping on readers not to drain on paper towels-would you want food that's been sitting in grease? By draining fried food this way, you get a much crisper result that won't be soggy by the time it is brought to the table.
