Apple Fritters

Danny wasn't pleased with my apple fritters because unlike the ones at Hy-Vee, mine have some apple in it. Once Mr. Eat The Blog picked out the apple pieces he seemed to like them better.

They turned out nicely, light and not too sweet, and they have apples in them, as the name suggests. You can see another apple fritter recipe I did a few years back HERE.

Adapted from the Betty Crocker Picture Cookbook, 1950

You Will Need:

2 eggs
1/2 cup milk
1 cup AP flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
Dash nutmeg
1 teaspoon melted fat or cooking oil
2 apples, chopped

Beat together eggs and milk. Sift dry ingredients and add. Mix well and blend in melted fat. Mix in chopped apples.

Heat deep fat to 375 degrees F. Fry until dark on both sides. Drain on a rack over a baking sheet and glaze with a confectioner's sugar/water coating if you like. Makes about 1 dozen fritters.
