Things To Do With Mushrooms
How about a deep dish pizza?
This pizza had poaches slices of potato, scallions and the mushroom filling. Instead of posting yet another pizza recipe, here's what I did with the mushrooms. You could easily put them to use with lamb chops, or tossed with pasta.
And yes, that was a gigantic pizza that provided three days of food.
You Will Need:
1 lb. mushrooms, trimmed and chopped fine
4 tablespoons butter
Salt/Pepper
4-5 fresh sage leaves
1/4-1/4 cup red wine (stick to something dry)
In a heavy pot, melt the butter over medium heat. Add the mushrooms and cook until they have reduced and given off some water (about 5 minutes). Add spices, and wine and turn heat to high. With a wooden spoon, keep stirring so the mushrooms do not scorch. Cook until nearly all the liquid is gone. Remove from heat and adjust seasonings.
That's it.
