Rolled Orange Cookies


Yes, I really need to work on my rolling technique. The cookies were really delicious, I just lack the skill necessary to make them attractive.

From Simca's Cuisine

(I omitted the raisins)

You Will Need:

1 egg
1/3 cup sugar (I used vanilla sugar)
1/4 teaspoon vanilla extract
1/3 cup AP flour
Grated zest of 1 orange
3 tablespoons creamed butter
1/4 cup raisins
Oil for baking sheet

Preheat oven to 400 degrees F. Grease a baking sheet.

Beat together the egg, sugar and vanilla until light and pale. Blend in the flour, rind, and then stir in the softened butter.

Drop by teaspoonfuls onto the sheet and make mounds the size of a walnut. With the back of a wet spoon, flatten and smooth dough into 2 1/2 inch diameter rounds. Put 2-3 raisins in each. Bake five minutes, or until edges are browned. Form them into rolls around the handle of a spoon, or what have you, working quickly. Dip in melted chocolate when cooled, if you like.
