Hot Cocoa

After a busy morning snowshoeing. kids have certain expectations. OK, just one really-and it had better be really good cocoa. None of that powdered crap.

This is so easy, a still half-asleep mama can manage it. If you make it ahead, it can be rewarmed when the boys get home...and mama can go back to sleep.

For 2-3 servings:

2 squares semi-sweet chocolate
Vanilla sugar to taste
2 cups milk

In a heavy pan, melt the chocolate. I don't screw around with double boilers-keep the chocolate moving with a heat-proof spatula and you'll be fine. When melted, remove from heat.

In another pan, heat the milk until it starts to steam. Whisk into melted chocolate over low heat. Add sugar as desired.

Serve with a peppermint stick and marshmallows. I'm sorry, but yeah-you have to use marshmallows. I don't make the rules.

Now, that is good hot cocoa.

Mary would be so jealous. She got some crappy hot chocolate at preschool and ended up with a migraine that lasted a full day.

Poor honey. I hope it was before the teachers actually knew she couldn't have chocolate. My biggest fear is that someone will think Danny's allergies aren't "real" and take it upon themselves to prove him wrong. I expect accidents to happen, but I swear, people are such assholes when they find out your kid has allergies/sensitivities to food. Like you owe them some sort of detailed explanation beyond the instruction not to give them things that make them sick.

Wow, I just went off a bit, didn't I?

You're probably a better mother than I am and don't let your children drink tea-but if you did, I wonder if it would bother her-some of the same compounds,in it?

Daffodils. Sigh. I have a foot of snow and more on the way. We're going into sub-zero crap again.

I'm consoling myself by ordering seed catalogs and planning the garden. The bird migrations start soon (hey Canada, your birdies are on their way home!)which means "Squak, honk, honk" all evening and early morning. Thank god we don't get the friggin' cranes in this part of Nebraska (though I have seen wayward storks and pelicans). Still, I know when the damn birds start, Spring is just around the corner.

Wow, I don't know if that previous comment was the result of ten years living in a "red" state or what, but the next thing you know I'll be railing against the Clean Air Act, endangered species, and demanding tax breaks. Geez. I don't really *hate* migrating birds...they're just noisy and messy.
